Any hints for a vegetarian (no meat, no fish) coeliac?

Hi Emily

Its perfectly possible to have a healthy gluten free vegetarian diet, but it does take some planning so be prepared to think ahead when shopping for ingredients for meals. The tempation of aleays to rely to heavily on cheese and cheese based meals instead of having meat or fish. This is fine sometimes but cheese, especially hard cheese is high in saturates which are bad for blood cholesterol levels, so look for lower fat protein alternatives like tofu, mycoprotein (Quorn) pulses, beans and lentils. Tofu and Quorn are easy replecements in dishes like stews and casseroles, beans and lentils can be harder work, but do freeze well if you use them to make up batches of dishes in advance, such as bean chilli that could be served with gluten free pasta or rice. Other sources of protein suitable for vegetarians are eggs and nuts. Nuts and nut butters are higher in fat, but it is a more healthly fat for the heart, but go easy if you are watching your weight.
