Hi

I  look after an 8yr old autistic child who is a fussy eater and on a gluten-free diet.

Have you any ideas how to make breakfast times more interesting.

Most autistic kids on GF are also casein free. 

One idea for hot food:  The traditional breton breakfast is buckwheat crepes (pancakes...  )

I like 100% buckwheat for savoury but I don't have a sweet tooth, just make sure you leave the mix 20 mins after mixing...  otherwise you get air bubbles. 

My 'grown up' favorite filling is raw ham, goat cheese and cepes (or porcinni in Italian) and shallots (prefried) but obviously if they are casein free then the cheese is out...  however you might like this while ythey eat something more kiddie..  cooked bacon and mushrooms with maple syrup ?? 

When I make sweeter ones I use 1/4 - 1/2 rice flour.. you can then use honey, maple syrup (grand-marnier for adults) ... wrapped in a paper towel they make convenient finger food. 

to cook either use a special crepe pan or a large fryingpan and a little butter...  the crepe pans are also good for tortilla's ...

buckwheat can be quite heavy on the digestive system ..  but its filling

dying to see what Gill suggests too.

Hi Madz

You will have a greater understanding to the dilemma of meal times with an autistic child than I do and I hope that some of my suggestions will be of use.

Like Steve I know that some autistic children should also be following a casein free diet as well, but all this is sometimes easier said than done as you will know.

Breakfast for Coeliacs as well as autistic children is one of the most difficult meals of the day, but lets be positive as there are a good few options out there.

I am going to concentrate on both GF and casein free and the main substitutes I would use for milk would be soya milk in the main and rice milk if a sweeter result was required, general spreads are a no go area you need the dairy free spreads.

I would use a general GF/WF DS white mix as a standard flour and the white bread mix if making bread. The sliced bread and rolls have no dairy free claim but contain no dairy ingredients.

The child may like specific shapes in which case the toast or bread could be cut into that shape. Sweet toppings of jam or honey etc can be used if the child will only eat the food this way, otherwise do without. A few suggestions are as follows:

Home made mini loaf perhaps with a gluten-free sausage

Scotch pancakes with spread or jam

Eggy bread

Bread toasted and cut into fingers or shapes

Fruit cut into wedges or pieces and served with a rice cake
