Hot always. For example the ingredients hydrolysed vegetable protein or modified starch could contain some gluten. Look for the cross grain symbol and check the food with the UK coeliac society. They regularly liaise with food manufacturers to produce an up-to-date list of all gluten free foods. Be wary of foods that do not need to declare all their ingredients such as foods sold loose or products that contain small amounts of another food.

Re 'modified starch', in UK this is always gluten free:
'..............The Food Labelling Regulations 1996 were amended by the Food Labelling (Amendment) Regulations 1998 to require ingredients of foods identified as 'starch' and 'modified starch' to indicate their specific vegetable origin where they may contain gluten (eg 'wheat starch'). These requirements came into effect on 1 July 1998. Ingredients can only be listed as 'starch' or 'modified starch' without giving the vegetable origin if they do not contain gluten.'
