What naturally gluten free items have you discovered since being diagnosed that you really like and don't think you would ever have tried if you were not on a gluten free diet?

Hi Bobby,

I now use lentils, pulses and beans that I didn't eat before I was diagnosed with Coeliac Disease.

A friend gave me a nice recipe for a gluten-free sausage casserole using Puy lentils, honey and tomatoes.

Then I picked up a supermarket recipe card using lamb and butter beans and that was delicious, and yet I thought I hated butter beans but I think they are great now! I even put them in mashed potatoes.

Instead of buying tinned soup I make my own soup using fresh vegetables with lentils.  I freeze what I don't need for another time.

I eat a lot more fresh fish now and have been a bit more adventurous trying different fish. that I wouldn't have tried before.

I use more honey in cooking now and find it a useful ingredient even in savoury dishes.

Hope that helps, what are your favourite foods now that you didn't eat before?

Janet Foster
